The Rishiri Buffalo Santoku is the Flagship knife of WASABI. It is handcrafted by an experienced smith in a 12 step process and finished using a traditional manual convex finished edge. This results in an extremely sharp knife, which remains sharp for a long time and lets you slice your food as thin as you want! 

The handle is hand polished and made of high quality natural ebony wood and buffalo horn. The knife comes with a finely crafted hand-carved Italian stitching, which is made of vegetable tanned leather. It is the ultimate knife that leaves no wishes unfulfilled 

The Santoku is the exotic among knives. Originally made for the preparation of Japanese dishes, it has long since found its way into international kitchens. A Santoku knife is ideally suited for the preparation of wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with ease.

This collection is named after Japanese islands and each knife is as beautiful as the islands themselves. Characteristic of the WASABI Island Special Collection are the colorful handles, which are well balanced to ensure long, comfortable and fatigue-free working.

But the blades are also a real eye-catcher. They consist of a custom made 10Cr15CoMoV core, covered by a 67-layer high quality Japanese Damascus steel. A hardness of 60 ± 2 HRC is reached at the end. In addition, each knife gets a traditional manual convex finished edge. This ensures a long-lasting sharpness, which takes your cooking to a new level and increases your pleasure.
