The Master Iriomote is a handmade masterpiece. In a vacuum heat treatment 73 layers of high quality Damascus are wrapped around a stable VG10 core. This results in an extremely sharp knife with a hardness of 60 ± 2 HRC. It ensures a long-lasting sharpness, which takes your cooking to a new level and increases your pleasure.
The ergonomic handle is hand polished and mainly made of high quality white shadow wood. It furthermore comes with a premium hand-stitched vegetable tanning knife sheath.
This model is the exotic among knives. Originally made for the preparation of Japanese dishes, it has long since found its way into international kitchens. A Santoku knife is ideally suited for the preparation of wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with ease.
Its characteristic feature, apart from the enormous sharpness of a Santoku knife, is its special shape: Unlike European models, the blade is wider than the handle, so that your fingers have more room when cutting. Furthermore, a Santoku knife is often lighter than its comparably large European relatives.

For optimal, long lasting sharpness we recommend you storing your knives using a knife block and sharpening your knives regularly using a whetstone or sharpening steel.
