Over time we have received a lot of feedback on our Okinawa Signature Santoku. Your words, our passion and a lot of hard work have moved us to create a new version of our beloved all-time classic.
What has changed is primarily the blade material. For this new creation we use a 7-layer composite steel, which forms the core of the blade. This core is covered with a softer high-carbon steel layer, which results in a beautiful blade design, while ensuring high durability, wear resistance, corrosion protection and long lasting sharpness. Each blade is individually hardened and sharpened by experienced craftsmen to reach a final hardness of 62 HRC.
The handle is not only beautiful and unique but also waterproof, anti-bacterial, heat resistant and features an ergonomic non-slip octagonal design. It is manufactured in a complex process using stable wood and carbon fiber to guarantee the aforementioned qualities. As the handle is handmade and consists of natural materials, each handle looks different and is completely unique.
The Santoku is the exotic among knives. Originally made for the preparation of Japanese dishes, it has long since found its way into international kitchens. A Santoku knife is ideally suited for the preparation of wok dishes and wafer-thin sushi. It cuts and chops meat, fish, vegetables and herbs with ease.
This collection is named after Japanese islands and each knife is as beautiful as the islands themselves. Characteristic of the WASABI Island Special Collection are the colorful and beautiful handles, which are well balanced to ensure long, comfortable and fatigue-free working.

For optimal, long lasting sharpness we recommend you storing your knives using a knife block and sharpening your knives regularly using a whetstone or sharpening steel. I ordered this knife because I love the handle of the Okinawa Series but I didn't want the typical damascus pattern. This knife convinced me by appearance and I have to say that I definitely don't regret purchasing it. It looks like the photos and is very sharp. Shipping took one week. Very happy with the value of this knife.
