My Dad was in the Navy, so we moved around a lot. That led to me seeing myriad cultures and cuisines. I have been excited about eating and cooking for as long as I can remember.Graham Elliot
The visual appearance alone suggests: A boning knife is designed for special use. Its long narrow blade is slightly curved and sharpened on both sides. This makes the knife particularly suitable for removing cartilage and tendons, for releasing bones, for peeling skin and for cutting meat or poultry.
Thanks to its narrow blade shape, the knife can be guided closely along the bone. In addition, the slender tip can be turned easily in any direction in the meat, and the strong handle supports the transmission of force. This makes working with a boning knife not only effective but also easy - and thanks to the excellent blade sharpness and its good feel, it is also a lot of fun.
The WASABI Blue Edition knives combine extraordinary beauty and sharpness. The blades have a core of VG10 and are coated with 67 layers of damascus steel. A vacuum heat process is used to harden the blade, which results in a hardness of 60±2 HRC and thus ensures long-term sharpness, as well as fast and uncomplicated working.
The D-shaped handle is ergonomically designed, fits snugly in every hand and ensures comfortable working. The blue colored wood gives the handle an exclusive look. Together with the elegant mosaic pin, the knife series is an eye-catcher in every kitchen.

I am breaking down different kinds of meat on a regular basis and my old knife got dull. After a lot of thinking I decided to try this knife out (because I found it to be the most beautiful), it does the job perfectly.
Very beautiful. Sharp
